How does Purefetta™ relate to Charlie's Table®?
Purefetta™ is the brand name for the corporation Charlie's Table, Inc. pasta, pasta flour blend and related products.

What products does Purefetta offer?

Are your pastas and flour gluten-free and free of the FDA (Food and Drug Administration) top 9 allergens?
Yes. Purefetta Pasta and Flour Blend are free of gluten and the FDA’s list of the top 9 allergens in America. The top 9 allergens are:
- Crustacean shellfish
- Eggs
- Fish
- Milk
- Peanuts
- Sesame
- Soybeans
- Tree nuts (such as almonds, pecans and walnuts)
- Wheat
Is your pasta and flour blend gluten-free and made in a dedicated gluten-free facility?
Yes – all our pasta and flour is made in a gluten-free facility and certified gluten-free by the Gluten-Free Certification Organization (www.gfco.org).
Is your pasta and flour blend made in a facility that is free from the top 9 allergens?
Purefetta pasta and flour is made in a dedicated gluten-free, dairy-free, peanut free, and soy-free facility. The facility is Certified Gluten-Free (GFCO), Kosher Pareve (OK Kosher), and SQF Level II.
-The facility does occasionally use tree nuts. According to our contract manufacturer: “For Tree Nuts we process, we have dedicated scoops, bowls and utensils to ensure there is no cross contamination before switching back to another item that does not contain Tree Nuts. Also, we do ATP swab tests on equipment after a tree nut run and before running an item that does not contain Tree Nuts. Finally, our tree nut customers must purchase an entire shift run worth of product and nothing is run simultaneously on those days.”
- While the facility occasionally uses egg, according to our co-packer: “We have amongst the most strict allergen programs in the industry. When egg is processed, it is relegated to an entire shift. We have color coded utensils solely for egg processing. Then, when we switch to an item without egg, a visual inspection and ATP swab test is performed to verify that there are no more synthesized proteins on a shared food contact surface. All of this is verified and recorded. The final step is the most important which is training of employees who handle these things so that they know what they are doing.”
- With respect to all other items: “We are DEDICATED gluten free, peanut free, dairy free, soy free, and kosher Pareve. We can and do process any other ingredients outside of these categories. We are SQF level 2 certified and take great pride in and keep meticulous records on our strict daily systems for cleaning, sanitizing, and changeovers. We also conduct weekly swab testing.”
Are your pastas and flour blend vegan?
Yes! Purefetta pasta and its flour blend do not contain egg or any non-vegan ingredient.
Are your pastas and flour blend kosher?
Yes. Purefetta pastas and pasta flour blend are certified kosher pareve.
What are the ingredients of your pasta and flour blend?
In order of quantity, ingredients in Purfetta pasta and pasta flour blend are:
- Gluten-Free Flour Blend (Potato starch, Millet Flour, Rice Flour, Tapioca Flour, Arrowroot)
- Water
- Xanthan Gum
- Citrus Fiber
- Cultured Sugar (not in pasta flour blend)
- Salt
- Spices
What is citrus fiber?
Citrus fiber consists of insoluble or soluble fibrous ingredients of citrus fruits such as orange, lemon, and limes.
Are there preservatives in your pasta or flour blend?
No. All Purfetta pastas and our flour blend are preservative free. Since our fresh pastas are preservative free, they must be stored in a refrigerator (up to 1 week) or freezer (up to 3 months). Our flour blend can be stored at room temperature.

You can purchase all selections of Purefetta pasta and Purefetta pasta flour blend through our online store.
What if I would like a restaurant to offer Purefetta Pasta or Pasta Flour?
If you would like to see our pasta in a local restaurant, please ask the owner or manager to contact us at sales@purefetta.com. We will take it from there.
Note: to avoid glutening, or an allergic reaction, it is advisable to ask a restaurant what measures it takes to assure there is no cross contamination. If you do not feel the measures are adequate, let the restaurant know about the Charlie’sTableOasis Restaurant Food Safety Program. SHIPPING AND RECEIVING ORDERS
When will my Purefetta pasta ship after I place my online order?
We ship Monday through Thursday. Orders placed by 10:00 p.m. ET the previous evening, will be shipped out the next day (Sunday order shipped out on Monday, etc.). Generally, orders placed after 10:00 p.m. ET on Wednesday will be shipped the following Monday. Shipping schedules will be adjusted during holidays and inclement weather.
When will my pasta order be delivered?
We ship all pasta orders via one or two day delivery, depending on the shipping address. All pasta orders are shipped frozen in an insulated cooler with dry ice and/or frozen gel packs. Since Purefetta pasta is perishable, please place immediately upon arrival in the freezer or refrigerator. You will receive tracking information from UPS or FedEx prior to your order shipping.
When are pasta flour blend orders delivered?
Pasta flour blend orders are shipped via ground service. Delivery times are typically between two and five business days. You will receive tracking information from UPS or FedEx prior to your order shipping.
Where do you ship?
Currently, we ship pasta to customers in the contiguous 48 states and pasta flour blend to customers in all 50 states.
SERVING AND STORING PASTA
How long will my pasta last?
If refrigerated, your gluten-free pasta should be consumed or frozen prior within seven days of receipt. If frozen, we suggest serving within 3 months. If you don't defrost the pasta in the refrigerator the day before serving, you may cook the pasta frozen. We recommend gently separating the strands of long cuts, including spaghetti, prior to placing in the boiling water. Just boil it a few more minutes to taste.
How do your store Purefetta Products?
- Pasta: Purefetta pasta may be stored in an airtight container in a refrigerator for up to one week or in a freezer for up to three months.
- Pasta Flour Blend: Store at room temperature in an airtight container.
For how long do I cook my pasta?
Cook Purefetta pasta in 2 – 3 minutes according to your taste. Start checking for you preferred level of al dente at 2 minutes or less.
Can Purefetta pasta be cooked from frozen?
Yes. Slighlty more time may be needed to cook. To avoid clumping, we recommend defrosting and separating the pasta before placing all pieces in the water at the same time.

TROUBLE SHOOTING
If I purchase pasta or flour blend through your website, what if the package arrives broken or something doesn’t look right?
At Purefetta, we do our best to assure that every pasta package is shipped and received in good condition. If your package or pasta is damaged, please contact us at info@purefetta.com and we will work to resolve the situation immediately.
What if I need to modify or cancel my order?
If the package has already been assigned a tracking number or already shipped, unfortunately we are unable to make modifications or cancellations.
What if I am not delighted with your pasta or flour blend?
If for any reason you are not satisfied with Purefetta pasta or pasta flour blend, please let us know. Purefetta was started to help people. We value customer feedback.
What happens if there is a problem with my order?
While Purefetta takes all reasonable precautions to assure our food arrives undamaged, stuff happens. If it does, we work to resolve the situation quickly. Please review our Refund Policy here for further details.
